What's for dinner?

One of the best things about having a baby has been having meals delivered to us. Well, tonight is our last meal delivery. Oh, how I have absolutely LOVED not having to cook. I so appreciate our friends and family taking care of us. I must say that before Mikey I did enjoy cooking. I would try new recipes all the time. Ryan is not a picky eater, so he would eat anything I would put in front of him. That gave me the freedom to try out all sorts of recipes. I would bring the left overs to work, and I would often get compliments on my lunch. Now, I don't know how to manage getting dinner on the table plus taking care of a one month old. I realize that we could order out, but that can get so expensive. Not to mention the fact that I'm trying to lose the baby weight and restaurant food is not exactly healthy.

So, help me out moms. What are some of your easy/fast recipes? How do you manage to find time in your day to cook the meal?

I know the feeling girl! I'm always on the lookout for good, easy recipes! And, now I really feel the pressure to make it good because Reid will be eating it too!! I'll pass on any that are good. Also, let me know when you're ready to go up to Lifetime! (I know that Mikey has to be 3 months before taking him to the child center, but that will be here before you know it!)

Here's my current favorite way to cook some veggies:
1. Slice veggies of your choice (I like zucchini, yellow squash, asparagus, sweet potato)
2. Spray a baking pan that has sides to it with PAM
3. Put veggies on top; sprinkle some olive oil on them and season with salt, pepper, and other seasonings you like (I like the Tony Sacheres seasoning)
4. Bake at about 400 for 10-15 mins; take out and turn veggies over; roast for another 10-15 mins.

Hey! If you get any easy & good recipes, you will have to post them! My favorite is Swiss Chicken. Do you have it? Let me know, & if you don't have it, I will email it to you. SO EASY & DELISH! (I got it from Meredith- she always has the best recipes).
